So, here’s a fun fact – I can’t live without Mexican food. My whole family loves it, going for tacos is often a budget friendly way to eat out and we can never get enough chips and salsa. I’ve found very few jarred salsas that I really love, I prefer the fresh flavor of restaurant style salsa and you won’t believe how easy is it to make a batch at home. This recipe makes about 4 cups of salsa, which is just right for a gathering or your next taco night. If you have any leftover, it keeps in the fridge for several days.
All you need are a few pantry staples, a food processor or blender and a few minutes. Make sure you have plenty of chips on hand…that is a fear of mine – running out of tortillas chips when we’re ready to dive into a bowl of salsa or guacamole. Running out would be a certain kind of travesty 😉

- 1 can FIRE ROASTED TOMATOES
- 1 can ROTEL TOMATOES
- 3 cloves GARLIC, peeled
- 1 cup FRESH CILANTRO (about ½ a bunch)
- 2 Tablespoons JARRED JALAPENOS, chopped
- 1 cup DICED ONION, white or sweet
- 1 teaspoon CUMIN
- 1 teaspoon SALT
- 1 teaspoon SUGAR
- ¼ teaspoon PEPPER
- 1 Tablespoon FRESH LIME JUICE
- Add everything to a food processor or blend. Pulse until you've reached your desired consistency.
- Serve with your favorite tortilla chips. Store in the fridge in a covered container.
