Cheesy Ranch Potatoes

Ranch, cheese, and bacon…. How can you go wrong?  I knew from the moment that I heard about these potatoes that they were ones I would not refuse.  I first tried them when my sister-in-law Brook made them with lunch on a Sunday afternoon.  They are everything you imagine they would be.  I have made them since and now I am just looking for the next time they will fit into my meal plan!  You should try them, trust me, you won’t be disappointed!

Cheesy Ranch Potatoes

Ingredients

  • 3 lbs. RED POTATOES, diced small
  • 1 teaspoon PEPPER
  • 1/2 teaspoon SEASONING SALT
  • 2 teaspoons CHILI POWDER
  • 2 Tablespoons BUTTER
  • 3 strips BACON, cooked and chopped
  • 1/2 cup CHEDDAR CHEESE, shredded
  • RANCH DRESSING

Instructions

  1. Preheat oven to 400 degrees. Place potatoes in a baking dish. Sprinkle them with chili powder, seasoning salt, & pepper. Place butter around the top of the potatoes. Cover with tin foil & cook for an hour or until potatoes are fork tender. Remove from oven and add bacon, cheese, and ranch dressing. Stir and return to oven uncovered until cheese is melted, about 5 minutes. ENJOY!

    These look awesome. What size baking dish did you use? My husband is grilling ham steaks tonight, so this will make a perfect side dish.

      I actually ended up using a rimmed baking sheet, but a 9×13 pan would work great too. Enjoy!

      It doesn’t matter either way, I made them the other day unpeeled and they were delicious!
