I made this delicious goodness recently and couldn’t believe I had waited so long to try it. I think the word frittata always sounded so scary and complex but it was really easy and it was great leftover as well.
Here’s how it goes, you can change up the ingredients and add whatever you and your family would like.
6 eggs
1 cup cubed ham
1/2 cup small cooked pasta (I used orzo)
1/2 cup sundried tomatoes (chopped)
salt and pepper to taste
hot sauce
1 cup cheese
In a bowl, mix together all the ingredients except the cheese. The amounts can vary in this recipe and once you make it you will know the consistency that you like it.
Heat skillet to medium heat and pour in egg mixture. Stir for about one minute, then let the eggs set up for about five minutes.
Cover with cheese and place under the broiler until the cheese is melted.

Here are a few tips for this recipe:
– After searching through several recipes, I saw that the addition of pasta was a huge hit. It adds a thickness to the frittata that I really enjoyed.
– I used a large skillet but if you want yours thicker you could put it in a smaller skillet. It may take a little longer to set up.
– If your skillet has plastic on the handle, cover with aluminum foil before you put it under the broiler. This will keep it from starting to melt if it is too close to the heat.
– I have also made this with just veggies and no meat and it was great.
