An excellent side dish for your upcoming 4th of July BBQ this weekend, this can easily be made a day ahead of time. For me, it’s mostly a ‘dump and taste’ recipe – the kind where I know what I need and I just add the ingredients to the consistency and taste I like.
6 medium potatoes
Green Onion, finely chopped
Mayo
Mustard
2 cloves of garlic, finely minced
Salt and pepper
4 slices of bacon, cooked and crumbled
Peel and dice the potatoes. Place in pan, cover with water and boil until fork tender. Drain and let cool to room temperature.
Mix together mayo, mustard, onion, garlic, salt and pepper in a large bowl. Add potatoes and mix gently until potatoes are coated. Taste and adjust to your liking. Stir in bacon. Cover and refrigerate.
