Have you ever tried something in a restaurant that you wish you could make your self? I know I have. So on Wednesdays this month, our recipes will be restaurant inspired favorites. Making great food at home is cheaper and healthier than eating out and if you have four kids, it’s also less stressful!
Today I’m featuring Quesadillas Qdoba-style. If you’ve been to Qdoba, you know that you stand in line to order while they make your food fresh for you. I really enjoy the food there – the three cheese nachos are my favorite and I also like their quesadillas. So when we made these at home and they tasted so much like Qdoba, I knew I needed to share this ‘method’ of quesadilla making.
Ingredients
Large FLOUR TORTILLAS
CHICKEN, already cooked and cubed (rotisserie works great!)
SALSA (recipe HERE)
Shredded CHEESE, any kind
BLACK BEANS, drained and rinsed
Heat a large skillet over medium heat.
Lay one tortilla on the pan, layer shredded cheese, chicken, salsa, black beans, shredded cheese.
Place the second tortilla on top.
Flip when the cheese is starting to melt and the underside of the quesadilla is beginning to turn golden brown.
Cook until the other side is golden.
Remove from pan, cut into wedges.
NOTES:
*Serve with sour cream, guacamole (recipe HERE) and salsa.
*Be sure to drain the salsa with a slotted spoon before putting it onto the quesadilla, otherwise it will be too wet.
*You can add any extra fillings that your family enjoys or take out something that they don’t

I love Qdoba Quesadilla’s!!! A way to make this taste even more like Qudoba is, after you put the second tortilla onto put a pan on top of it, flip like normal. This makes it crispier and delicious! 😀
