I have been waiting to share this delicious dish with you since I made it. Of course, we wanted to share the holiday treat recipes first. This is a recipe that I would love to make every other week or so. I love how you could change it up with what you have in your pantry. I adapted this recipe from another blog (Iowa Girl Eats) and used what I had in my kitchen. The recipe looks like it has a lot of steps but they go very quickly.
Stuffing & Sausage Stuffed Squash

3-4 acorn squash
1 lb. italian sausage
1 large granny smith apple, chopped
3/4 cup chicken broth
1 pkg. Stove Top Stuffing Mix
Garlic Salt, pepper, olive oil (to taste)
– Pre-heat oven to 425 degrees.
– Wash squash and pierce with knife several times. Microwave squash for about 2 minutes. Slice squash and scoop out seeds. Microwave for an additional minute.
– Repeat process until you have heated all of your sqaush. Drizzle with olive oil and salt & pepper.
– Place squash on a cookie sheet covered with foil. Bake for 20-25 minutes.
– While the squash are baking, brown sausage in pan and start the stuffing mix. Add chopped apple & chicken broth to meat. Cook until slightly soft. Once stuffing is finished, mix with sausage mixture.
– Divide mixture evenly among squash halves.
– Place squash under broiler for a few minutes until they start to brown.
