Game day will be here before you know it…you know the one I mean…only the biggest football game of the year. And no matter who you’re rooting for, one thing unites us all…it is a day we will be EATING all we can. So all this week, we will be featuring super recipes that you can enjoy while watching the commercials game come February 6th.
This is the perfect time of year to enjoy a warm, comforting bowl of soup. Let’s not forget Black Bean and Salsa Soup, Cream Cheese Potato Soup or Pumpkin Chili, all fabulous options. A big pot of soup (or two) is a great way to feed a crowd, pair this white chicken chili with corn bread and you’ve got a great complement to any game.
White Chicken Chili

2 teaspoons OLIVE OIL
1 medium ONION, chopped
3 GARLIC CLOVES, minced
1 can (7 oz.), CHOPPED GREEN CHILES
1 teaspoon GROUND CUMIN
1 teaspoon DRIED OREGANO
1/8 teaspoon CAYENNE PEPPER
1 can (15 oz.) GREAT NORTHERN BEANS, undrained
3 cups CHICKEN BROTH
2 cups CHICKEN, cooked and shredded
1 1/2 cups (6 oz.) MONTEREY JACK CHEESE, shredded
Heat oil in a large pot over medium-high heat.
Add onions and saute until translucent. Stir in garlic, chiles, cumin, oregano, and cayenne pepper; saute for 2 minutes.
Add beans, chicken broth and chicken. Bring to a boil.
Reduce heat, simmer for about 15 minutes and add cheese. Stir until cheese is melted.
Season with salt and pepper. Serve garnished with shredded cheese and chopped cilantro.
This makes about 6 servings, double according to the size of your crowd.
