Seafood always sounds like a romantic dinner item, however, I am often intimidated when making it. We are featuring two meals this week that you can cook for someone you love and they both involve seafood. I think this is great because it gives you some options and you can make a nice meal at home for less. When I found this scallop recipe a few years back, we served it for a New Year’s Eve dinner and everyone loved it. If I would have known how easy it was, I would have done it long before. A local restaurant here in town makes there own scallop sauce that is to die for (but it’s a secret recipe) so that definitely makes the scallops even better. Maybe a local restaurant where you are has a similar sauce. We serve scallops with a vegetable, such as steamed asparagus and rice or potatoes. It’s the perfect meal for someone you love.
Broiled Scallops
1 pound bay scallops
2 teaspoons garlic salt
1 Tablespoon and 1 teaspoon butter, melted
1 Tablespoon and 1 teaspoon lemon juice
1. Turn broiler on.
2. Rinse scallops and pat dry with paper towel. Place in shallow baking pan. Sprinkle with garlic salt, 1 Tablespoon melted butter and 1 Tablespoon lemon juice.
3. Broil scallops for 6-8 minutes or until golden brown. Remove from pan and serve with remaining butter and lemon juice to dip in.
Serves 2 people.
