It’s that time of year…the kids are headed back to school. Ready or not, there they go. Life starts getting hectic and you may need to have a few ideas for quick and tasty meals up your sleeve. That’s the topic of conversation here on C&C this week.
Today we’re talking one of my very favorites – BREAKFAST! We already have a great selection of breakfast recipes hanging out over in the Crumbs Index. I’m going to take a second to remind you of a few that would be the perfect start to the school day:
Muffins – Banana, Brown Sugar Crumble Banana, Mini Chocolate Chip Pumpkin, Monkey Bread, Any Way You Like ‘Em, Strawberry Nutella (Muffins freeze well so they’re easy to make ahead and have on hand for busy mornings!)
Granola – Honey, Peanut Butter
Eggs and Such – Breakfast Bake, Egg-in-a-Hole, Peanut Butter Banana Oatmeal, Buttermilk Pancakes, Biscuits and Gravy
When sending the kids out the door to school, it’s important to feed them something for breakfast that’s going to keep them satisfied until lunch. The recipe below is simply eggs, bacon and cheese baked in a muffin pan. Perfectly portioned, these little cups are easy to make ahead and throw into the freezer. And if there’s no time to sit down and eat them, they can easily be taken on the go.
SCRAMBLED EGG CUPS
Recipe by Crumbs and Chaos
1/2 lb. BACON*, chopped
12 EGGS
3 Tablespoons HALF & HALF or MILK
1/2 teaspoon SALT
1/4 teaspoon PEPPER
1/2 cup SHARP CHEDDAR CHEESE, shredded
Preheat oven to 350°. Grease a 12 count muffin tin.
In a large skillet, cook bacon, Remove to a paper towel lined plate to drain.
In a bowl, whisk together eggs, half & half (or milk), salt and pepper. Stir in cheese and bacon.
Spoon into prepared muffin tin.
Bake for 15-20 minutes or until a knife inserted in center comes out clean.
TO FREEZE: Let cool completely. Place on a wax paper lined cookie sheet. Freeze for about an hour. Remove to a freezer storage container or baggie. Thaw and reheat as needed.
*These could easily be made with pork sausage or ham instead of bacon.
