Greek Bruschetta

As I was looking for a bruschetta recipe for this week, I knew that I wanted to satisfy that craving for bruschetta but also give it a different twist.  If you have read anything about me you know that the combination of greek flavors is my FAVORITE!  This bruschetta recipe combined all of those flavors and is a must try.  While it is great served as an appetizer on toasted french bread, I can also see this being served on top of hot noodles for a greek pasta!

Greek Bruschetta

Ingredients
  • 1 loaf FRENCH BREAD, sliced
  • 1/2 cup TOMATOES, diced
  • 1/2 cup CUCUMBERdiced
  • 1/2 cup KALAMATA OLIVES, diced
  • 1/4 cup RED ONION, diced
  • 1/4 cup FETA CHEESE
  • 1 Tablespoon BALSAMIC VINEGAR
  • 1/8 teaspoon DRIED OREGANO
  • SALT and PEPPER, to taste
Instructions
Toast the baguette slices in the oven: Preheat oven to 400 degrees F. Place baguette slices on a baking sheet. Bake for 7-10 minutes, or until golden brown. In a medium bowl mix diced tomatoes, cucumbers, kalamata olives, and red onion. Add balsamic vinegar and feta cheese. Stir until well combined. Season with oregano, salt and pepper. Top baguette slices with bruschetta topping to serve. ENJOY!

    Brilliant idea! I love Greek salad, and I love bruschetta… darned if I know why it’s never occurred to me to put those two things together. 🙂 Sounds like just the thing for a light meal or an easy party appetizer.
