Oh Pinterest…. the site of countless ideas and never ending inspiration! DIY projects, fashion ideas, and drool worthy recipes galore! This time, as my mother-in-law’s birthday approached I was again assigned the job of making dessert. Last year I made the Chocolate PB Trifles, and while I know she LOVES peanut butter and chocolate, this year I wanted to pick something different! <Enter Pinterest and Cherry Pie Bars> These seemed like a great dessert that wouldn’t take a ton of time or effort. The fruit filling is definitely a switch from the peanut butter and chocolate. So I gave it a try. The recipe suggested using two cans of cherry pie filling, if you love cherries. It also called for the use of a 15x10x1 inch pan with the substitution of a 9×13 inch pan. I definitely went with the two cans of cherries and didn’t regret it! Although I did use a 9×13 because I didn’t have the other. And that I do wish I had done differently. While the flavor was amazing, the crust on the bottom was a little too thick for my liking. Which in turn had to bake for about 15-20 minutes longer than called for. Overall, I can see myself making this again with the said adjustment. The crust was more of a cookie than a pie but had the perfect flavor to balance the cherries. And the glaze on top added the perfect amount of sweetness!
Ingredients
- 1 cup BUTTER, softened
- 2 cups SUGAR
- 4 EGGS
- 1 teaspoon VANILLA EXTRACT
- 1/4 teaspoon ALMOND EXTRACT
- 3 cups FLOUR
- 1 teaspoon SALT
- 2 (21 ounce) cans CHERRY PIE FILLING
- 1 cup POWDERED SUGAR
- 1/2 teaspoon VANILLA EXTRACT
- 1/2 teaspoon ALMOND EXTRACT
- 2 Tablespoons MILK
Instructions
- Preheat oven to 350 degrees. In a mixing bowl cream together butter and sugar. Add eggs and beat well. Beat in extracts. In a separate bowl combine flour and salt. Add to the creamed mixture. Mix until combined. Spread 3 cups batter in a lightly greased 15x10x1 inch pan. Spread with pie filling. Drop remaining batter on top of pie filling. Bake for 30-35 minutes or until toothpick comes out clean. Cool on wire rack. Combine glaze ingredients and drizzle over the bars. ENJOY!

I’m always getting requests for cherry pie. This would be a great alternative. Also, I love a thick pie crust, so I might would try the smaller pan.
