I have a very dear friend who would always laugh when I said that something was ‘super easy’ to make.  You know – super easy things like brownies, ice box pie or even ice cream.  She had a hard time believing that there were things out there that were worth the time and effort to make that could actually be accomplished by someone without very much kitchen confidence.

I’m going to make a new category here on C&C – Super Easy.  All the recipes that really are ‘super easy’ will be filed here, no guessing – even for the kitchen novice.  Simple instructions for easy and delicious meals and desserts….this one’s dedicated to you, Em.

How could there be anything bad about a recipe that is titled Chocolate Chip Butter Cake?!  This is the cake you whip up on a Saturday morning to enjoy over dinner with friends later in that evening, a quick cake to make on Tuesday evening when you realize you’re in charge of bringing dessert to a meeting the next day.  This cake is perfect unadorned, but I couldn’t resist topping with one of my favorite chocolate frostings and, of course, a few sprinkles.

Chocolate Chip Butter Cake

This super easy recipe for chocolate chip butter cake can be enjoyed in no time and is the perfect way to satisfy your sweet tooth!

Ingredients

  • 2 3/4 cups FLOUR
  • 1 cup SUGAR
  • 1 Tablespoon BAKING POWDER
  • 1/2 teaspoon BAKING SODA
  • 1/2 teaspoon SALT
  • 2 cups CHOCOLATE CHIPS
  • 3 EGGS
  • 1 cup BUTTERMILK
  • 1 cup SALTED BUTTER, melted
  • 1 Tablespoon VANILLA EXTRACT

Instructions

  1. Preheat oven to 350°. Grease a 9x13 baking dish.
  2. Combine flour, sugar, baking powder, baking soda and salt in a medium bowl. Add in 1 1/2 cups chocolate chips and stir.
  3. In another bowl, combine eggs, buttermilk, melted butter and vanilla. Add to dry ingredients and stir together gently.
  4. Pour into prepared pan and sprinkle with remaining chocolate chips. Bake for 35 - 40 minutes or until toothpick tests clean. Cool completely before frosting or slicing.
