The perfect answer to your next meal time dilemma – Ranch Ham, Cheese & Veggie Pasta has got it all – meat, veggies and plenty of cheese!
One of the most dreaded questions of the day is ‘Mom, what’s for dinner?’ The reason that I dread it is because I haven’t done a very good job of meal planning lately, usually I have about an hour and 39 minutes after being asked to get it figured out. There’s always the quick and easy spaghetti and taco options or there’s also breakfast for dinner (which I can usually get away with at least once a week). With school starting it’s time to get back in the meal planning mode, incredible meals like this one make me want to do just that.
The moment that I tried this recipe, which I saw over at Taste and Tell, I was smitten…gooey, cheesy pasta goodness full of ranch flavor. I fall in love all over again every time I make this – it is an absolute crowd pleaser. You can most definitely make the sauce ahead of time and prep the veggies early to get dinner on the table even faster, just reheat the sauce before serving. I’d recommend enjoying it with these fabulous garlic rolls.
A flavorful pasta dish that brings has it all - meat, veggie and plenty of cheese!
Ingredients
- 12 oz TUBE SHAPED PASTA
- 1 Tablespoon BUTTER
- 1 Tablespoon FLOUR
- 1 cup MILK
- 2 teaspoons DRIED PARSLEY
- 1 teaspoon GARLIC SALT
- 1 teaspoon LEMON PEPPER (OR GARLIC PEPPER)
- 1/2 teaspoon GARLIC POWDER
- 1/2 teaspoon ONION POWDER
- 1/2 teaspoon DRIED DILL
- PEPPER, to taste
- 1 cup SOUR CREAM
- 1 1/2 cups MONTEREY JACK CHEESE, shredded
- 1/4 cup FRESHLY SHREDDED PARMESAN CHEESE
- 2 cups CUBED HAM
- 4 cups VEGGIES, roasted or steamed*
Instructions
- Cook pasta according to the package directions.
- In a medium saucepan, melt butter. Whisk in flour, cooking for about a minute. Slowly add milk, cooking until thickened, stirring often. Stir in spices and season to taste with pepper.
- Reduce heat and stir in sour cream. When smooth, add in cheeses and stir until melted. Pour sauce over pasta, add ham and veggies. Toss together before serving.
Notes
I prefer to roast whatever veggies I have on hand (broccoli, mushrooms, peppers, cauliflower all work well here) for 15-20 minutes at 400°. You could also steam them as well.
