At our house, snacks come in different shapes and sizes…fruit, yogurt tubes, granola bars, pretzels, the occasional P3 or PB&J. We made up a batch of these before leaving on a recent trip and they were great for grabbing out of the cooler and snacking on as we drove down the interstate.
Here’s what I love about them – they’re made from 5 simple ingredients, they’re easy to mix up and just 2 of them are enough to satisfy my sweet tooth, which makes them a sensible snack 😉

Easy M&M Snack Bites
Ingredients
2 1/2 cups ROLLED OATS
1 cup CREAMY PEANUT BUTTER
1/2 cup HONEY
1 teaspoon VANILLA EXTRACT
3/4 cup MINI M&Ms
Instructions
Place all ingredients in a large bowl. Stir well.
Use a 1 Tablespoon cookie scoop to scoop mixture into balls. Place on a Silpat* lined baking sheet. Use your hands to roll them into smooth balls*.
Store in an airtight container in the fridge.
Notes
*You could also put them on parchment or wax paper.
*If you feel like it's hard to roll them at room temperature, chill them prior to rolling smooth.
